Umami is one of the five basic tastes. It is described as a “meaty” flavor or “savory deliciousness.” Umami is essentially a taste of glutamate, an amino acid that occurs naturally in many delicious foods, such as tomatoes, cheese, cured meats, and mushrooms.

AJI-NO-MOTO® MSG contains glutamate in an easy-to-use form. It is produced through the natural fermentation of plant-based ingredients including sugar cane, sugar beets, cassava or corn. AJI-NO-MOTO® is a versatile seasoning that enhances flavor easily and safely.

The Discovery of Umami

Dr. Kikunae Ikeda was a Japanese scientist with a mission to improve the nutrition and welfare of the Japanese people in the early 1900s. He discovered that a naturally occurring amino acid (monosodium glutamate) was responsible for the delicious flavor, now famously known as “umami”.

Today, AJI-NO-MOTO® is used around the world to bring out the delicious flavor of all cuisines and ingredients.

Enhance real ingredients

Sprinkle it on during any part of the cooking process. One pinch of AJI-NO-MOTO® MSG is approximately 0.5g. Here are some sample uses to get a feel for how much to use:

Fried rice (for 2 people)  4-5g
Stir-fry/omelet (for 2 people) 1.5-2g
Miso soup (for 1 person) 1.5-2g
