Katsudon
Katsudon is a delicious Japanese dish featuring crispy fried pork cutlets served over a bed of fluffy rice. The pork is breaded and fried until golden and crunchy, then topped with a sweet and savory sauce that blends perfectly with the tender meat. A layer of softly scrambled eggs adds richness and completes this comforting meal, offering a satisfying mix of textures and flavors that's hard to resist.
INGREDIENTS
- 4 Each – Lean Boneless Pork Chops, Trimmed and Pounded Thin
- To Taste – Salt
- 1 Cup – Flour
- 4 Whole – Eggs, Beaten
- 2 Cups – Panko Bread Crumbs
- 1 Cup – Vegetable Oil
- 1 Cup – Onion, Sliced
- 5 Tbsp – Mirin
- 5 Tbsp – Soy Sauce
- ⅔ Tsp – Hondashi®
- 1 ½ Cups – Water
- 4 Tbsp – Green Onion, Sliced
- 4 Cups – White Rice, Prepared
DIRECTIONS
1. Season the pork chops with salt.
2. In shallow bowls dredge the pork chops in flour, then egg then panko.
3. Heat 1 cup of oil in a shallow pan to 350 Degrees.
4. Fry the pork chops on each side for 4-5 minutes. Then remove from and set a side.
5. In a shallow saucepan add mirin, soy sauce, Hondashi®, and water then bring to a boil .
6. Add the onions to the saucepan and simmer for 3 minutes.
7. Slice the pork chops into even slices and add them to the simmering saucepan.
8. Add the green onions and the beaten egg and simmer until the egg is half cooked.
9. Top the rice with the pork and egg mixture and serve.
